Vegetable Gasi (udupi style)
You will need:
Coconut - 1 cup (1/2 coconut)
Tamarind - 1 lemon size
Cumin seeds - 1 tsp
Red Chillies - 2
Jaggery - 1 tbsp (powdered)
Turmeric
Salt to taste
Pressure cook chickpeas and vegetable and keep aside.
Roast Coriander and Cumin seeds and the Red Chillies
Serves about 6 people
Goes well with Rice, Chapathi, Idli

Mangalore Cucumber - 250 gms (Ivy Gourd (ತೊಂಡೆ ಕಾಯಿ) or Yam (ಸುವರ್ಣ ಗಡ್ಡೆ ) can be used.
Chickpeas - 200 gms (Green peas, Potatoes) can be used. Coconut - 1 cup (1/2 coconut)
Tamarind - 1 lemon size
Sambar Powder - 1 tsp (ಸಾರಿನ ಹುಡಿ)
Coriander seeds - 2 tspCumin seeds - 1 tsp
Red Chillies - 2
Jaggery - 1 tbsp (powdered)
Turmeric
Salt to taste
Pressure cook chickpeas and vegetable and keep aside.
Roast Coriander and Cumin seeds and the Red Chillies
Grind Coconut, coriander and cumin seeds, red chillies, tamarind and sambar powder (ಸಾರಿನ ಹುಡಿ) together into a fine paste along with a little water. Keep aside.
In a Wok/Vessel, put together the vegetables and the chickpeas.
Add the masala paste.
Add Salt, Turmeric, jaggery to the mixture.
Cook with a a little more water for about 5-8 minutes and the gasi is ready.
Serves about 6 people
Goes well with Rice, Chapathi, Idli
