Bread Masala - Hotel Diana Style
Thanks to Pallavi and Nivedita for passing on this recipe to me and M(my sis in law). Please let me know if you have read this recipe anywhere else coz I think this is very unique and very rare.
You will need:
Pav ( as in Pav Bhaji or vada pav) - 4 nos.
Gravy:
Onion - 5 nos. chopped
Garam Masala powder - 1 tsp
Ghee - 2 tbsp
Sugar - 1 tbsp
Oil - 1 tbsp
Salt to taste
Tandoori Red color (Optional)
Masala:
Tomato - 6 nos. chopped
Cashewnuts - 1/2 Cup
Garlic - 4 flakes
Ginger - 1 inch
Red Chilli - 3
Green Chilli - 2
Cloves - 4 nos
Garnishing:
Corainder leaves - 2 tbsp finely chopped
Onion - 1 no. finely chopped
Cashewnuts - 10 - 20 (roasted in 1 tbsp of ghee)
Cut each pav into 8 pieces and keep it aside.
Grind all the ingredients of the masala (tomatoes, cashew, garlic, ginger, red chilli, green chilli and cloves) and keep aside
Heat a Kadai and add oil.
Add chopped onions and fry till it is golden brown.
Add the ground masala and fry for about 5 minutes in low heat.
Add garam masala and Ghee.
Add sugar, salt and tandoori red color (Optional)
boil for 5 mins and put out the heat.
Add the cut pav to this gravy. Garnish it with raw onion, coriander leaves and cashew nuts.
An awesome evening snack that is unique and lovely
Serves about 4 people

My favorite. Now Diana is not preparing this. Stopped long back. I checked many times.
