Shunti (ginger) Thambuli
Ginger - 1 inch
Pepper - 5 grains
Jeera - 1 tsp
Grated Coconut - 3 tbsp
Ghee - 1 tsp
Curd - 1 cup

Urad dal Seasoning (refer glossary). Instead of red chillies, use the dried curd chillies.
Fry Ginger, pepper and Jeera in a little (1 tsp) ghee.
Grind this along with grated coconut.
Add Curds and Salt.
Add Seasoning (Jeera, pepper and curry leaves – crush the Jeera and pepper a little).
Usually prepared during the rains and goes very well with Rice.
Serves about 2-3 people.
