This post has been long pending. My friends and I were discussing podi, ambade, baje, the same thing that's classified as Bonda-Bajji in Bangalore. This post is here to answer a few of these questions and list out a few Udupi fried snacks and their names

Podi:
Podi is a deep fried or Tawa roasted snack that uses a slice of vegetable marinated in spices.
