Spinach Corn Blooming Quesadilla Ring

We host a lot of parties at home and I love cooking. So was looking for a party food ring and came across a quesadilla ring recipe on Tasty.co. Got inspired and recreated the whole recipe to a veg option. Have tried it a couple of times now and it has not failed to impress any of our guests.







Tortilla was replaced with Samosa Patti/Wrapper sheets, the Chicken filling has been replaced with Spinach Corn filling. I have used Switz Samosa Patti Sheets. But this can be replaced with any other Samosa Wraps or home made samosa wraps as well or even Tortillas. ( Yes, I have tried making a whole wheat option, the covers were a little hard after baking). A combination of Wheat and Maida works well. Once the dough is rolled, make sure to par cook it on  both sides on a tawa. 
The quesadilla ring is served with a bean dip, the recipe of which will be posted soon. 

You will need: 

For the Cones: 
Samosa Sheets - 25 (I have used Switz Samosa Patti Sheets)
Flour/Maida - 1 tbsp
Milk - 2 tbsp

For the filling: 

Olive oil - 2 tbsp
Butter - 2 tbsp
Garlic - 10 - 12 pods finely chopped
Spianch - 1 bunch/ 4 -5 Cups cleaned and Chopped
Corn - 1 Cup (par boiled)
Paneer - 50 gms (crushed)
Oregano - 1 tsp
Pepper - 1 tsp
Fresh Cream - 3 tbsp
Milk - 2 tbsp
Cheese slice - 2 slices AND/OR Processed Cheese - 1/4 Cup (grated)
Salt to Taste - 1 tsp

For Garnishing: 
Milk - 1/4 Cup
Mozerella cheese AND/OR Cheddar Cheese  - 150 gms/ 1 1/4 cup Grated
Bell Peppers of all colors - 1 Cup (diced small)
Sping Onion - 1/2 Cup (chopped finely)


You will have to: 

Cones: 
Take each of these Samosa Wraps, double it and make a cone.
Mix milk and maida to make a paste. Use this paste to seal the cone.

Filling: 
Heat Oil and butter in a wok. Add Garlic and roast till golden brown
Add Chopped Spinach and saute for 10 mins or till water evaporates.
Add Corn and cook for another 2 mins.
Add salt and cook until Water Evaporates
Add Panner, Oregano, Pepper.
Add Milk and let it come to a boil.
Now add Cheese. Once the cheese starts thickening, switch of the flame.
The Filling shouldn't be very watery. It has to be a little thick consistency. The cheese gives that consistency. If it is watery, the cones will be soggy.

Quesadilla: 
Fill each cone with Spinach Corn filling, leaving a little space for the cheese.
Top it with Cheese.

Smear butter/Oil on the baking tray.
Place a glass or a bowl in the centre.
Place the filled cones around the bowl such the open side faces  outside and the cone points are towards the bowl in teh centre.
Using a brush, rub a little milk on all the cones. (Egg wash will work wonders too).
Top it with Chopped bell peppers of all colors and Spring Onion.
Remove the bowl from the centre
Bake for 20 mins in a preheated oven at 180* celcius.

Take out the tray, Garnish with Mozerella cheese and bake for another 2 - 3 mins at 180* Celcius.

Serve hot once out of the Oven. Place the bowl back and add the dip into the bowl.

Blooming Quesadilla Ring
Preparation time: 60 minutes
Cooking time: 20 - 25 minutes
Goes well with: Bean Dip, Salsa Sauce, Just like that
This can be served as a Starter/Appetizer or a Main Course

Tips:
(i)  If fresh corn is used, it can be directly used without par boiling
(ii)  The Cones can be made 2 days in advance
(iii) The Bean dip can be made 2 days in advance and stored in the fridge
(iv) The Spianch Corn filling can be stored in the freezer for over a month. 
(v) Paneer can be left out in the Spinach Corn filling
(vi) Mozerella Cheese on top of quesadilla can harden when the ring cools down. Add cheese on top and then bake for 2 -3 minutes or until the cheese melts. 
(vii) The quantity of Cheese can be increased or decreased according to taste
