How To's - Seasoning

Here is a list of seasonings used in the recipes across the blog

a) Rai Seasoning: 

Ingredients:
Oil/Ghee - 1 tsp
Rai - 1 tsp
Red Chilli (broken) - 2
Curry leaves

Method:
Heat Oil. Once the oil is hot add rai, red chilli and curry leaves. Once the whole thing is fried, turn the fire off. The seasoning is ready.

b) Jeera Seasoning:

Ingredients:
Oil/Ghee - 1 tsp
Jeera- 1 tsp
Red Chilli (broken) - 2
Curry leaves

Method: 
Heat Oil. Once the oil is hot add Jeera , red chilli and curry leaves. Once the whole thing is fried, turn the fire off. The seasoning is ready.

c) Hing Seasoning: 

Ingredients:
Oil/Ghee - 1 tsp
Rai - 1 tsp
Red Chilli (Broken) -2
Hing -1 pinch
Curry leaves

Method:
Heat Oil. Once the oil is hot add rai, red chilli, Hing and curry leaves. Once the whole thing is fried, turn the fire off. The seasoning is ready. 

d) Urad Dal Seasoning: 

Ingredients:
Oil
Mustard seeds (Rai/saasive)

Black gram (Urad dal/Uddina bele)
Red Chillies (Laal Mirch/Ona Menasu)
Curry Leaves (Kari patta/Karibevu)


Method:

Heat oil, add mustard seeds and black gram, red chillies and curry leaves. Once the whole thing is fried, turn the fire off. The seasoning is ready. 

e) Sendige Menasu Seasoning:

Ingredients: 
Oil - 2 tspSaasive (Rai/Mustard) - 1 tsp
Menthe (Methe/Fenugreek) - 4-5 grains
Sendige Menasu (Sendige Munchi/Green chilli marinated in Curd and dried) - 4
Use any other red chilli if Sendige Menasu is not available
Curry leaves - 4-6

Method:
Heat oil, Fry the sendige menasu.
Add Saasive, Menthe and curry leaves.
Once the whole thing is fried, turn the fire off. The seasoning is ready.
