Tomato Soup

This is a simple tomato creamy Soup.


You will need:
3-4 tomatoes - blanched
1 potato - cooked and peeled
1 onion - finely chopped
4-8 garlic cloves - finely chopped
1 bay leaf
6-8 pepper corns as per taste
1/4 tsp cinnamon
1 tsp butter
1 tsp butter or oil
1 tbsp cream
Salt and sugar to taste
Cream, coriander leaves and bread pieces


You will have to:

Heat butter in a pan. Add peppercorns, garlic. Saute for a min or 2. Add onions. Saute till golden brown. Add smashed blanched tomatoes. Cook for 5 mins.
Let it cool. Blend it in a mixer. Add potatoes and blend further.
Heat oil in the pan. Add bay leaf. Add the mixed tomato paste. Add salt, sugar and cinnamon powder. Boil for 5 to 8 mins.
Add cream and switch off the flame.
Garnish with cream, coriander leaves and bread pieces.

Tips: 

  1. Generally made with potato for getting the thickness. If you want it healthier, try out carrots instead. 
  2. Adding Basil instead of Bay leaf gives a Italian taste to the soup. 


Makes: 4-6 soup bowls of Soup
Goes well with:  Garlic bread or just like that
