Creamy Palak Soup

Palak is not loved by all. This soup route is one of the easiest way to feed this vitamin rich green. You could make it rich and creamy by adding butter and cream or you could make it a diet soup by ignoring these two. In any case, this is one of my favorite soups. Try it out and let me know how you liked it.

You will need: 
Palak/Spinach: 1 bunch, cleaned and blanched
Carrot: 1 small
Tomato: 1 small
Onion: 1 small
Potato: 1 small (Optional)
Garlic: 2-4 cloves (Optional)
Cumin: 2 tsp
Pepper: 2 tsp
Oil: 1 tsp
Milk: 1 Cup
Butter: 1 tbsp (Optional)
Cream: 2 tbsp (Optional)
Salt to taste

Optional: 
a) Green Peas
b) Corn
c) Paneer
d) Baby Corn

You will have to: 
Cook Carrot, Tomato, Onion and Potato and retain the water. You could either pressure cook or slow cook the veggies.
Heat pan, add oil and roast Cumin, Pepper, Garlic.
Grind the Veggies, Palak, Cumin, Pepper and Garlic.
Pour the paste into a thick bottomed wok/pan/vessel and sim cook it.
Add milk and water to bring it to your required consistency and boil it for 2-4 mins
Add Salt.
Add Butter, Cream (Optional)


Skill Level: Easy to Intermediate 
Makes: 2 cups of soup
Preparation Time: 15 mins
Cooking Time: 20 mins (Plus Palak Blanching Time)
Goes well with: Rusk or Garlic Bread or just like that

Tips: 
(i) Alternatively, you could saute onion instead of cooking them. Cooking them makes it easier
(ii) If Garlic is not used, Cumin and pepper can be dry roasted so there is no need of oil at all. 
(iii) Potato may or may not be used based on your dietary and fitness requirement. Same with butter and cream. But adding these gives a rich flavor to the soup. 
(iv) Adding corn/paneer adds color to the otherwise green soup.
