Clear Palak Soup

This soup is for those people who like a clear soup and also like Palak (Spinach). Use whatever veggies you like in this clear soup. Along with Palak it becomes Clear Palak Soup, else u could drink it like a Mixed Veggie Clear Soup.

You will need:
Palak (Spinach) - 4 -6 leaves (Blanched)
Onion - 1 (Chopped)
Garlic - 4-5 Cloves (Chopped)
Olive Oil - 1 tbsp
Pepper Corns - 4-6 (based on your spice level)
Soya Sauce - 1 - 2 tbsp
Vinegar - 1 - 2 tsp
Salt to taste
Mixed veggies - 1 Cup (diced or long sliced and cooked Carrots, Beans, Cauliflower florets). Retain the water used for cooking veggies.
Spring onions
Water/ Vegetable Stock


You will have to: 
Blanch Palak whole leaves and keep it aside.
Heat Olive oil in a pan, add Garlic and Onion and saute for 2-3 mins.
Add soya sauce, vinegar and saute for 1 minute.
Add water/Vegetable stock, salt, Cooked veggies and boil for 3-4 mins.
Add blanched palak leaves, spring onions and pepper powder and boil for a minute.

Skill Level: Easy to Intermediate
Serves: 4-6 people

Preparation time: 25 minutes
Cooking time: 15 -20 minutes
Goes well with: Just like that. 

Tips:
(i) Add Tofu or Paneer to increase the protein content of the soup.
(ii) Add sliced  or single leaves of Cabbage  along with mixed veggies. 
(iii) Add more water along with vegetable stock if needed. 
(iv) Add cooked noodles to make it a noodle soup along with palak or replacing palak (Refer to recipe for steamed noodle soup). 
(v) Add Wontons or replace palak with Wontons to make the same soup a wonton soup.
