Cauliflower Soup

Another variation of Cauliflower soup (Chunky- Creamy Soup).

You will need:
Cauliflower florets - 2 cups (soaked in salted hot water for 5 -10 mins and strained)
Onion - 1 finely chopped
Tomatoes - 1 finely chopped
Garlic - 6 cloves finely chopped
Pepper - 6 to 10 corns
Cumin - 1 tsp
Butter - 1 tsp
Oil - 1tsp
Salt to taste

You will have to:
Heat a teaspoon of oil in a pan.
Add pepper and cumin and let it splutter
Add garlic and saute till golden brown.
Add chopped onion and saute till golden brown
Add tomatoes and let the tomatoes cook.
Pour the mixture in the mixer  and blend it to a fine paste. Keep aside.
Heat 1 tsp of butter in the same pan.
Add  Cauliflower florets into the pan. Saute for a few more mins till the Cauliflower is tender.
Add the paste and salt. Add water to bring soup to your preferred consistency.

Makes: 4-6 cups of soup

Cooking Time: 30 mins 
Goes well with: Garlic Bread, rusk or just like that

Tip: 
(i) Add Green peas or corn for more chunkiness.
(ii) Replace cauliflower with broccoli florets and your broccoli soup is ready.
