Cauliflower Soup - Thai Variation

A Creamy Chunky soup again. Basil and lemon grass brings out a different flavour in the soup

You will need:
Cauliflower florets - 2 cups (soaked in salted hot water for 5 -10 mins and strained)
Onion - 1 finely chopped
Tomatoes - 1 finely chopped
Garlic - 6 cloves finely chopped
Pepper - 6 to 10 corns
Cumin - 1 tsp
Butter - 1 tsp
Oil - 1tsp
Salt to taste
Basil
Lemon grass
Coconut - 1 tsp

You will have to:
Heat a teaspoon of oil in a pan.
Add pepper and cumin and let it splutter
Add garlic and saute till golden brown.
Add chopped onion and saute till golden brown
Add tomatoes and let the tomatoes cook.
Pour the mixture in the mixer along with coconut  and blend it to a fine paste. Keep aside.
Heat 1 tsp of butter in the same pan.
Add lemon grass
Add Cauliflower florets into the pan. Saute for a few more mins till the Cauliflower is tender.
Add the paste and salt. Add water to bring soup to your preferred consistency.
Garnish with basil

Makes: 4-6 cups of soup
Preparation Time: 30 mins
Cooking Time: 30 mins 
Goes well with: Garlic Bread, rusk or just like that

Tips: 
(i) Replace Cauliflower with Broccoli and your Broccoli Soup - Thai Variation is ready
