Cauliflower Dill Soup

This is an interesting soup and until my aunt gave me this recipe I never thought that Dill leaves and Cauliflower would go so well. Try it out

You will need:
Cauliflower florets - 2 cups (soaked in salted hot water for 5 mins and strained)
Dill leaves - 1/2 cup finely chopped (Sabbasige/Sabsige Soppu)
Onion - 1 finely chopped
Garlic - 6 cloves finely chopped
Pepper - 6 to 10 corns
Cumin - 1 tsp
Milk - 1/2 cup
Butter - 2 tbsp
Salt to taste

You will have to:
Heat a teaspoon of butter in a pan.
Add pepper and cumin and let it splutter
Add garlic and saute till golden brown.
Add chopped onion and saute till golden brown
Place the mixture in the mixer.
Add a few cauliflower florets to the mixer and blend it to a fine paste. Keep aside.
Heat 2 tsp of butter in the same pan.
Add Dill leaves to the pan and saute for about 8 to 10 mins.
Add remaining  Cauliflower florets into the pan. Saute for a few more mins till the Cauliflower is tender.
Add the paste, milk and salt. Add water to bring soup to your preferred consistency. Add the remaining butter before serving.


Makes: 4-6 soup bowls of Soup
Goes well with:  Garlic bread or just like that
Skill Level: Intermediate

Tips: 
(i): Replace Cauliflower with Broccoli florets and your Broccoli Dill soup is ready.
