Potato Saung (Batate Song/Batate Saung)

Credits to Varsha.... An awesome konkani dish that goes well with Dal rice, chapathi or Poori.. We all die to eat it when made by Varsha.


You will need:
Onions - 6 Chopped finely
Potatoes - 4 (Big) Pressure Cooked and diced
Oil - 4-5 tbsp
Salt to taste
Water - 1 - 2 glasses

Masala: 
Coconut - 1/2 Cup
Red Chillies -  4
Hing - 1/2 tsp
Tamarind - 1/2 lemon size

Heat a Deep pan (Kadai/Banale).
Add 2 tbsp of oil
Let it heat.
Add chopped onions. Let it fry until golden brown.
In the meanwhile in another pan, roast coconut. Keep it aside in a mixie jar.
In the same pan, add a drop of oil and roast the red chillies and the hing.
Add it to the mixie jar.
Add tamarind to the jar and grind it along with a little water.
Add this to the golden brown onion.
Fry it for about 5 - 8 minutes until the
Add salt. Add about 1/2 or 1 of glass water.

Add Potatoes and the remaining oil.
Cook for about 5 - 8 minutes.


Let it cool for about 30 minutes as the potatoes have to absorb the masala.

Serves: 4-6 people

Preparation time: 25 minutes
Cooking time: 30 minutes
Goes well with: Dal & Rice, Chapathi or Poori

Tips:
(i) This can be prepared without coconut in which case, use Chilli powder and Tamarind water. 
(ii) The longer the Potatoes marinate in the masala, the tastier it becomes.
