Sev Aloo Tikki

I had once been to Punjabi Times where I tasted Sev Aloo Tikki. I was so inspired by it that I tried it my style.


You will need: 

For Aloo Tikki dough (Potato Patty)
Potatoes - 4 (Pressure cooked, peeled & mashed)
Onion - 2 ( very finely chopped)
Green Chilli - 2- 4 (finely chopped)
Kitchen King Masala - 1 tsp
Lemon juice - 1/2 lemon
Coriander leaves - 1/4 Cup (finely chopped)
Oil - 1 tbsp
Cumin seeds (Jeera) - 1 tsp
Salt to taste


Heat oil in a deep fry pan
Add cumin seeds. Once the Cumin seeds splutter, add green chillies
Add Onion and fry for a 2 mins.
Add Kitchen King Masala. Fry for a min.
Add salt. Add mashed potatoes.
Add coriander leaves and put off the heat.
If this dough is a little watery, then you can add bread crumbs that will absorb water.


For Tikki:
Maida - 2 tbsp
Milk - 4 tbsp
Salt to taste

Bread crumbs - 1 cup
Sev - 2 cups
Oil for Frying

Mix maida and salt. Add milk and make a paste without forming lumps.
Take the dough and make small balls of the dough and flatten it.
Dip it in bread crumbs on all sides
Dip it in maida paste and then dip it in sev so that the patty has sev on all sides.

Heat oil in a deep fry pan.
Once the oil is hot, fry the sev covered tikki (patty) until golden on both sides.
Take it out on a kitchen towel so that excess oil from the tikki (patty) is absorbed.

Makes: 12-15 patties
Preparation Time: 30 mins
Cooking Time: 30 mins 
Goes well with: Chutney or Tomato chutney or Tomato Sauce. 

Tip:
(i): Use Garam Masala Powder instead of Kitchen King Masala
(ii): Instead of bread crumbs, use Poha powder. To make poha powder: Roast 1 Cup Poha in a dry pan. Powder it in a Mixie. This works very good as it absorbs more water. 
(iii): You can make Sev at home. If sev is made at home, then par fry it as it gets fried again in the tikki.
