Goli Baje - Mangalore Bajji

Goli Baje is one of the very famous mangalorean dishes, to the extent that it is called Mangalore Bajji. Of course, its made of maida (multi purpose flour) and fried in oil, but, I presume, eating this once in a while is excused.

You will need:


Maida - 1 Cup
Buttermilk (sour) -1/2 Cup
Green Chilli - 2 - 4  (chopped finely)
Ginger - 1 inch (chopped finely)
Coriander leaves - 1/2 Cup (Chopped finely)
Baking powder - 1/4 tsp
Sugar - 1/2 tsp
Salt to taste

Oil for frying

Mix maida, green chilli, ginger, coriander leaves, baking powder, salt & sugar.
Add buttermilk and make it into a very thick batter. The batter has to be a little thicker than Dosa batter. Making it too thin/watery will make it absorb more oil.
Let it rest for 30 mins if buttermilk is not very sour. If buttermilk is sour, it can be fried immediately.
Heat oil in a deep pan (Kadai/Baanale).
Take a little batter in your hand and drop small balls in the hot oil.
Let the baje fry on all sides until golden colour.
Remove it from oil and put it on a tissue or a kitchen towel so that the excess oil is absorbed.
Serve this with coconut Chutney

Cooking Time: 20 mins
Goes well with: Coconut Chutney or any other chutney

Tips:
(i) More sour the buttermilk, better the taste of the baje
(ii) I usually add a spoon of rice flour to make it crispy
(iii) Sugar gives the colour to the bajes and as it is Bajes are made a little sweet
