Chapathi Upma

Ever heard of Chapathi Upma? No? Neither had I... until one night when we were at my friend's place for a dinner party. There were so many friends that my friend had invited that his wife lost count of how much to cook. There was no sabji left for the people who were having dinner at the end. So she quickly cooked this one up and everyone loved it.

You will need:
Chapathi - 4 nos.
Onion - 2 no.s finely chopped
Tomato - 2 no.s finely chopped
Green Chillies - 2 -4 finely chopped (as per your taste
Oil - 2 tbsp
Mustasd seeds (Rai/ Sasive) - 1 tsp
Black Gram (Urad Dal) - 1 tsp
Red Chillies - 2
Curry leaves - 4 -6
Turmeric - 1 tsp
Salt to Taste
Sugar to taste

Cut each chapathi into small peices and keep it aside.

Heat Oil in a pan. Add mustard seeds, black gram, red chillies and Curry leaves.
Let it splutter for a minute.
Add Green Chillies, Turmeric and Onion. Fry it for about 5 mins
Add tomatoes and fry for another 5 mins.
Add salt, sugar and the cut peices of chapathi.
Fry for about 3-4 mins or until the chapathies feel fresh & crispy.
Add chopped coriander leaves (dhania/ kottambari Soppu) and put off the fire.
Serve it hot.

Serves about 3-4 people

Preparation Time: 15 mins
Cooking Time: 15 mins

This is a yummy recipe in case u have leftover chapathi or if you don't have enough time to cook both Chapathi and an accomodating Sabji.

Tip:  Add a little bit of cumin powder (jeera /Jeerige) along with Turmeric if you like the taste of it.
