Veg Pulav (ground Masala)

sssYou will need:
Rice - 2 cups (soaked for 20 mins & then roasted until white in color).
Water - 5 cups
Oil - 1 tbsp
Onion - 2 (chopped)
Potato - 2
Carrots - 2
Beans - 25- 30
Green peas - 1/2 cup
(add any other vegetable)
Turmeric - 1tsp
Sambar powder - 1 tsp (to get the flavor)
Sugar - 1 tsp
Salt to taste.

Masala:

Cinnamon - 1 inch
Clove - 8 -9
Poppy seeds (khus khus) - 2 tsp
Mint leaves (Pudina) - 1/2bunch
Coriander seeds - 1/2 of a big bunch
Saunf - 2 tsp
Ginger - 1 inch
Garlic - 3-4 cloves
Green chillies - 2-3


Grind everything for the masala into a fine paste.
Heat oil in a thick bottomed pan (pressure cooker will do).
Add Onion and saute until onion is tender. 
Saute the masala in the oil.
Add the rest of the vegetables and saute further.
Add water, turmeric, sambhar powder, salt and the sugar. Add a spoon of ghee for further flavor.
Cook until the rice cooks or if pressure cooker is used, cook for half of the whistles required for regular rice making. I use about 2 - 3 whistles.


Serves about 4-6 people
Goes well with mixed veg Raitha.

  1. 1. For every glass of rice add 1 glass of coconut milk and reduce that much water. This enhances the taste so much.

    2. Also add 1 tsp of ghee after adding the water.
