Simple Veg Palya

Simple veg palya - side dish for chapati or rice meal

Veggies needed:

- Round brinjal (2 medium size)
- Capsicum (1 medium size)
- Potato (2 medium size)
- Methi (one hand full) put more if you like tinge of bitterness

Cut all veggies in long pieces. Keep it slightly thin so that they cook faster

Preparation

- 2-3 tsp of oil
- Pinch of Mustard
- Curry leaves
- Pinch of Jeerige
- Add all veggies stir fry
- Add 1 1/5 tsp coriander powder (or according to your taste)
- Add 1 1/5 tsp red chilli powder (or according to your taste)
- Add salt for taste

Optional- add water if you wanna leave it unattended till it cooks else, stir fry until 90% cooked. Add methi in the end (it takes only few mnts to cook)

Sprinkle fresh coriander (if in stock ;-) )

Ps. Can add methi to any stir fry palya, Its adds and opens beautiful flavor.
