Lemon Rice

You will need:
Oil - 2 tbsp
Mustard seeds - 1 tsp
Black gram - 1 tsp
Red Chillies - 2
Curry leaves - 5-6
Peanuts - 1/4 cup
Green Chillies - 1 (chopped finely)
Onion - 2 chopped
Rice - 2 cups cooked
Lemon juice - 2 tsp
Turmeric - 1 tsp
Sugar - 1/2 tsp
Salt to taste
To garnish
Coriander leaves - 1/4 cup (chopped finely)

  • Heat a thick bottom pan. Add oil.
  • When the oil is hot, Add Turmeric.
  • Add mustard seeds, black gram, red chillies and curry leaves.
  • Add green chillies.
  • Add peanuts and saute till they are roasted.
  • Add onion and fry until golden brown.
  • Put the fire out.
  • Add salt, sugar and the lemon juice.
  • Add rice and mix well.
  • Reheat until the rice is heated so that the rice absorbs the masala.
  • Garnish with Coriander leaves and serve it hot

Serves about 4 people

Cooking time: 15 mins (if cooked rice is available)
