Mango (Kukku) Rasayana


Rasayana (Mango/ Banana/ Melon)

Kukku Rasayana/Bale Parand Rasayana/Ibbudla Rasayana

You will need: 
Kukku (Mango) - 4 nos.
Jaggery - 2 cups
Salt- 1 pinch

Coconut milk, you will need: 
Grated Coconut - 1 nos
Cardamom - 4 nos
Water - 2 glasses


Method:

Coconut Milk: Refer to Grossary and the video
  • Grate Coconut. Grind it along with a few cardamoms. 
  • Use a strainer and strain the milk out of it.
  • Repeat the process. You should have atleast 4 glasses of Coconut milk
Rasayana:
  • Peel out the fruit. Squeeze out the Pulp
  • Add Jaggery and a Pinch of Salt
  • Add Coconut milk. 
  • Mix this along with the Mango-Jaggery pulp.
  • Garnish with cut mango pieces
  • Serve it cold 
 Serves about 6-8 people

Goes well with: Just like that, Chapathi, Poori, Neer Dose, Kadubu/Moode/Oli, idli, Plain Rice Shavige or even just plain beaten rice/Poha
Cooking Time: 20-25 mins
